I don't think you have to wash the second coat off. If you are starting from the begining, you do have to wash twice. The first would be a dawn wash to remove dirt and any built up wax and/or grease. Then you would clay the car. Then you would wash again (with a regular car wash soap - I use Zaino Z7) to remove the clay residue. Then you are ready for the polish/wax/Zaino etc.
